What the day includes
- A morning market, and choosing the ingredients yourself: chillies, lemongrass, whatever is good that day
- A chilli paste pounded by hand in a stone mortar
- Cooking at the wok, with everything ready and to hand before you start
- Eating what you cooked, at the table where you cooked it
How the day runs
Morning
Start at the market while it is still busy with people buying for the day, and pick what you are going to cook.
Late morning
Move to the kitchen with what you chose, and get it all ready before any of it goes in the pan.
Midday
Pound the paste in the stone mortar first, then cook. The wok is hot and this part goes quickly.
Afternoon
Sit down and eat what you made, at the same table you made it on.
Pace
Standing more than walking. A flat walk around the market, then time on your feet in the kitchen, at the speed of whatever is in the pan. There is a half day version of this trip, shortened with you when we plan it.

Availability
We do not hold dates, seats or rooms on this website, and nothing here is confirmed while you are reading it. After you send a request we check what is possible for your dates with the people who would run the day, and we write back with what we find, including when the answer is no.
If you need to cancel
If your trip is arranged and you then need to cancel, these are the terms we work to: cancel 30 days or more before the first day and you are refunded in full; cancel between 15 and 29 days before and you are refunded at least half. The full terms are written into the quote you receive, so you read them before you agree to anything. No payment is taken on this website, so there is nothing to pay here and nothing to refund until a deposit has been arranged with our team directly.
Who you will be with
The people you spend the day with, the driver, the guide, the cook whose kitchen you are in, are chosen by us for that day. We plan each day with them directly, and we tell you who you will be with before you agree to anything. One person on our team stays your point of contact from the first message to the end of the trip. If something on the day is not what we described, tell us. The arrangement is ours to put right, not yours.
